Chicken and Tomato Stew

Instructions

1. Cut chicken into bite-sized pieces and season with salt and pepper
2. Heat olive oil in a large pot
3. Brown chicken on all sides, then remove and set aside
4. Add diced onions and garlic to the pot
5. Add chopped tomatoes and bring to a simmer
6. Return chicken to pot and cook for 30 minutes
7. Garnish with fresh basil and serve
